Winemaking techniques emphasize tension and texture. Following a dawn harvest, the grapes undergo whole-cluster pressing and fermentation across a precise mix of vessels: 40% in concrete eggs and 60% in a combination of new and seasoned oak. By skipping malolactic fermentation and aging for eight months on lees, the estate maintains the wine’s signature citrus-forward profile, marked by notes of lime zest, elderflower, and a faint smoky finish.
