For cousins Ivan Shen and Jing Zhang, the decision to bring the bakery chain to Western New York was driven by personal history. Having grown up in New York City where the brand was a daily staple, the duo identified a gap in the local market during their frequent visits to the Buffalo area. They viewed the expansion as an opportunity to introduce a familiar, high-quality bakery experience to their new community, aiming to create a central gathering space for Williamsville residents.

This launch marks a significant milestone for Paris Baguette, representing their second location in upstate New York. The company, which maintains a goal of reaching 1,000 stores across the U.S. and Canada by 2030, relies on partnerships with local entrepreneurs to fuel its growth. Darren Tipton, CEO of Paris Baguette, noted that the brand seeks to re-establish the neighborhood bakery as a community hub. The café will offer the company's signature selection of artisan pastries, breads, cakes, and handcrafted beverages, adhering to the brand's focus on neighborhood-centric service.
