Biscuit Belly Acquires 34 Maple Street Locations to Scale Operations

Louisville-based Biscuit Belly is absorbing 34 Maple Street Biscuit Company locations in a strategic acquisition from parent company Cracker Barrel. This move effectively triples the gourmet sandwich chain’s footprint, pushing its total unit count toward a target of 60 restaurants by the end of 2028.

The conversion process will unfold over the next 18 to 24 months, beginning with existing sites in Cincinnati and Richmond, Virginia. For Biscuit Belly CEO Chad Coulter, the deal addresses the two most persistent obstacles in the restaurant industry: the slow pace of real estate development and the challenge of recruiting established staff. By inheriting the Maple Street footprint and its personnel, the company bypasses years of traditional site selection and hiring cycles.

Since its founding in 2019, Biscuit Belly has leveraged a niche for elevated Southern comfort food to expand across the Southeast. Co-founder Lauren Coulter noted that the acquisition accelerates a decade-long objective to become the dominant gourmet biscuit brand in the United States. While the interiors and menus will shift to reflect the Biscuit Belly identity, the company plans to integrate the existing store-level teams into its current operational culture.
