Savor and AAK Partner to Decouple Specialty Fats from Agriculture

Savor and AAK have signed a two-year strategic collaboration to develop dairy and bakery ingredients, pairing Savor’s carbon-to-fat technology with AAK’s global commercial network. The agreement, which includes an equity investment by AAK, aims to deliver specialty fats that bypass conventional farming entirely.

The partnership centers on Savor’s proprietary Carbon Crafted™ platform, a technology capable of producing fats directly from carbon. By integrating this process with AAK’s established formulation expertise, the companies intend to create ingredients that require 1,000 times less land and produce up to 98% fewer carbon emissions than traditional animal or plant-based fats.

Focusing initially on the U.S. and European markets, the collaboration addresses the dual pressure facing food manufacturers: the need for supply chain resilience and the urgency to reduce environmental footprints. AAK’s Global Head of R&D, Kim Olofsson, noted that these new fats can be engineered alongside existing plant-based oils to provide specific functional performance, such as texture and taste, while insulating manufacturers from the price volatility associated with traditional agricultural supply chains.
